Pistrache Gazpacho

INGREDIENTS:

  • Ripe tomatoes.
  • Green bell peppers.
  • Garlic.
  • Stale bread.
  • Cucumber.
  • Salt.
  • Olive oil.
  • Vinegar.
  • Cold water.
  • Apple.

PREPARATION:

In a clay pot or mortar, crush a couple of garlic cloves with some salt.

Then add chopped green bell peppers and crush well.

Next, add peeled ripe tomatoes, stale bread, and vinegar, gradually crushing them with olive oil until you get a as homogeneous as possible mixture.

Cold water is added to this mixture, along with crumbled bread, chopped cucumber, and apple slices.

Serve as cold as possible as a dessert.

Although the trend is to drink only the broth in a glass, as a refreshing drink or a first course, it has always been eaten with a spoon as it is, in fact, a cold soup.
